A pile o' floor

Yup, we got a pile o' floor at home.
This morning the flooring people called to see if I was home so they could bring it by -- the minute I walked out of the elevator! So I did an email/phone check, entered data for 30 minutes and went home to let them in. It goes in next week. More updates to follow.

Gaaaaarlick daaaaarling

Welcome fall. It isn't really fall, in MS it is still in the 80's... but it sure feels cool. The faux weather drew me in... i had to give the crock pot a whirl. Welcome to cooking with sarah, the beginning of fall

Today was my take on the Crock Pot Lady's 20 to 40 Clove Garlic Chicken.

Ingredients
3-4 lbs chicken
1 onion, sliced
1 tbl oil (olive or canola)
2 tsp salt
2 tsp paprika
1 tsp pepper
2 tsp oregano
2 tbl parsley flakes
20-40 peeled garlic cloves


Directions
I used bone in breast halves. I removed the skin and fat from the chicken. Place chicken in a bowl with oil, spices, and garlic cloves. Crock pot lady didn't suggest the oregano and parsley, i stole them from another recipe. I was out of basil or I would have added it too. Toss to fully coat. Place onions on bottom of crock and lay chicken and garlic on top. Cover and cook on low for about 8 hours.


Verdict
I was amazed at how much moisture there was in the crock when I came home -- the onions were basically gone, however the garlic was still intact. The chicken was a tad dry, however i used the juice to jazz it up. It was probably dry because I was at work for a little longer than 8 days. I felt like the flavor was subtly garlic without being overpowering. The roasted garlic was a little stronger, but not at all bitter.

I ate it with Kate's roasted broccoli son-style. After eating I was reading the comments at Crock Pot Lady's... Tomorrow I'll be eating leftover chicken with mashed potatoes -- made with the leftover garlic.

In your second serving of Cooking with Sarah... I made chili this weekend. All the football fun and the rainy sunday afternoon called to me. This was my first stab at chili from scratch. The recipe I followed used Cinnamon. Very different -- I liked what it brought to my beef, tomatoes, and beans. yummy. I <3>

Home sweet home


I came home to some welcome home decorations. Not sure who all i have to thank -- if any of you cuprits want to give yourselfs up, go for it! I did enjoy!! Particularly the lynched flamingo!

Sate Fair

Not our state fair (its a great state fair) but the Utah state fair. It started up the other day so I took an oppertunity to experinece it all whilst in UT. I think I'm spoiled -- it just wasn't nearly so big and awesome as the IL and WI state fairs. Maybe this year I'll go to the MS state fair for comparison purposes.

I saw lots of animals, including my favorites, the Jersey cows and the rabbits. The sheep did their baa thing and the goats were adoreable. There was crazy produce too. The evening ended with my first rodeo.

Big Dig? Utah not Boston

Stopped by the Bingham Canyon Copper Mine, the largest Open pit mine in the world. Crazy big. Absolutely. In.Sane. It actually started out as a mountain -- now its a huge excavation. You can actually fit more than 2 Sears Towers in there and not reach the original surface.

Fun fact for the day: they actually mine copper, silver, and gold here. Thus the 2002 Olympic medals were made from Bingham Canyon products. Thats the only time the medals have been made using local maerials.




Mining equipment is also huge -- see the awesome tire. I don't want to know what happens when one of those goes flat.

The process. We actually drive by the smelter every day on our way to work.

It was REALLY windy, as demonstrated by this self-portrait.
The Final Product: A copper panel produced using an electrolysis process with an anode and a cathode. Sadly, I understood far too much of the explanation of how they produce these panels. Grrr over-educmacation. I guess I did learn something in H.S. after all.

Park City UT

While in UT I took a side trip to Park City. I didn't actually make it to Park City itself, I wound up stopping at the Olympic Park out there. Very fun to see the location of the 2002 downhill, freestyle, luge, bobsled, and skeleton competitions. Athletes now train there, and you can zip line down the ski jumps and do the bobsled thing. Tres cool. They also have a little olympics museum where I got to see a bunch of oympic medals and a curling stone!

Dining at Market Street

The blogging from Salt Lake City Begins. In SLC for work for a while. I enjoy the SLC -- its clean, and pretty -- the mountains are all gorgeous. We went to the Market Street Grill in downtown SLC for dinner. They fly in fresh fish, and it shows - I had some yummy sea bass. The waiter was visually yummy too! It brought back memories of a past trip were we had dinner at the Market Street grill. I recall my salmon being really good, and Kelly Miller made comments about our very effeminate waiter all night. Good times!
