Lazy Friday Night

Not much to report here. Sorry for the boredom in blog land lately. I didn't want to get too too whine-y on the whole Floor thing.. which means there wasn't much to say.

Floors are in. Furniture is back. I'm back in town. Now its time to get motivated to unpack.

Instead I'm enjoying an evening on the couch with "it's the great pumpkin, Charlie Brown" and doing a little web surfing. I've got two new favorites added in now... Cake Wrecks and Dispatches from the Island.

-Cake Wrecks is a fun one I found on a girl from work's blog -- pictures of crazy cakes -- what professional would try to sell some of these?

-Dispatches from the Island might be my new favorite blog. This is the random ramblings of Jorge Garcia. Yup, you got it, Jorge Garcia, also known as HURLEY on my FAVORITE show EVER, LOST!!! He is just as funny in real life as on the tv box :) Check it out! Major kudos to Amanda for finding that one.

No asparagus left behind.

Dinner is good. Dinner is even better when it is back in Vicksburg and you've spent a little time at home.

Rusty's Appetizer of the day: Fried asparagus. Delish! Kudos to Jen on the suggestion of Rusty's for a drink after the first day back in the office.

This could be heavan

Being in my own home, sleeping on my own bed, with flooring!
Seriously!! I was happy, as were the JG's.

Surprisingly they were able to start installing the floor last Tuesday. We had checked the slab moisture in 10 distinct locations Friday afternoon. By Tuesday morning those locations had all dried up more despie (1) a weekend full of pouring rain, and (2) no equipment from serv pro. That made me wonder if they actually did any good with any of their efforts over the previous week or two -- it seemed like they didn't actually do anything despite all the money insurance was paying them -- and i was able to dry it on my own... hmmm.... So the floor guys worked the floor thing Tuesday, Wednesday, all day Saturday, and up until an hour before I left Sunday. They look really good. More pictures to follow once I'm back home and able to get settled back in some more.
I definitely wasn't the only happy camper. Or non-camper now that we aren't in air matress city.

You put the rum on the chicken

Tonights cooking with Sarah: Mojito chicken. Yummy.

A couple of months ago I found the Grilled Mojito Chicken at $5 Dollar Dinners. I thought it looked pretty good. I finally gave it a chance with a few mods.

Ingredients
4 Chicken breasts
1/4 cup olive or canola oil
juice of 2 limes
1.5 tbl sugar
1 shot Bacardi
~1 tsp salt
~1/2 tsp pepper
1 cup chopped mint

Mix all items and let chicken marinade for at least 30 min. I pan sauteed the chicken -- it would be equally good if grilled or baked. I served it over couscous with black beans and corn.

Verdict: Easy, quick, healthy, yummy.

Lumberjack Sarah

I spent the afternoon working on the yard (again). The lawn finally got mowed after two weeks of work travel and a week of rain. I also took the tree limbs to the side of the road to get some use of my county tax dollars. Then I got motivated to tear down the tree that is overgrowing on the side of the house. I also pulled out a bunch of dead growth from around the AC and in the canna lillies. The side of the house looks amazing compared to the before (which i didn't take a picture of). For proof, look at the pile of limb-age at the side of the road!!! I hope to finish this chore so I can put a butterfly bush and some other goodies over on the side of the house. That is the area that gets full afternoon sun. Might as well use it!!

Aren't you jealous of my afternoon, not! Actually it as a great afternoon -- if the inside of the house can't look pretty at least the outside can be non-hideous.
